Ingredients and Steps

Big text, no distractions — for the stove

Ingredients

  • Sponge cake
  • Chocolate icing
  • Desiccated coconut
  • Sugar
  • Cocoa powder
  • Butter

Steps

  1. 1Cream butter and sugar together until light and fluffy, then beat in eggs one at a time.
  2. 2Fold in flour and a little milk alternately, along with vanilla, to make a smooth, light sponge batter.
  3. 3Pour the batter into a prepared baking pan and bake in a moderate oven for about 30 minutes, until a skewer inserted in the center comes out clean.
  4. 4Let the sponge cool completely, then cut it into small even squares.
  5. 5Make the chocolate icing by mixing cocoa powder, powdered sugar, and melted butter with a little hot water or milk, stirring until smooth and pourable.
  6. 6Dip each cake square into the chocolate icing using a fork, turning it to coat all sides evenly, then let the excess drip off.
  7. 7Immediately roll the coated square in desiccated coconut, pressing gently so it sticks all over before the icing sets.
  8. 8Place the finished lamingtons on a wire rack to let the coating firm up before serving.
