Lamington
Ingredients
- •Sponge cake
- •Chocolate icing
- •Desiccated coconut
- •Sugar
- •Cocoa powder
- •Butter
Steps
- 1Cream butter and sugar together until light and fluffy, then beat in eggs one at a time.
- 2Fold in flour and a little milk alternately, along with vanilla, to make a smooth, light sponge batter.
- 3Pour the batter into a prepared baking pan and bake in a moderate oven for about 30 minutes, until a skewer inserted in the center comes out clean.
- 4Let the sponge cool completely, then cut it into small even squares.
- 5Make the chocolate icing by mixing cocoa powder, powdered sugar, and melted butter with a little hot water or milk, stirring until smooth and pourable.
- 6Dip each cake square into the chocolate icing using a fork, turning it to coat all sides evenly, then let the excess drip off.
- 7Immediately roll the coated square in desiccated coconut, pressing gently so it sticks all over before the icing sets.
- 8Place the finished lamingtons on a wire rack to let the coating firm up before serving.
