Ingredients and Steps
Big text, no distractions — for the stoveIngredients
- Red lentils
- Berbere spice
- Onion
- Garlic
- Ginger
- Vegetable oil
- Tomato paste
Steps
- 1Heat vegetable oil in a pot over medium heat and cook finely chopped onion for about 10 minutes, stirring occasionally, until soft and golden.
- 2Stir in minced garlic, grated ginger, and a generous amount of berbere spice paste, cooking for a couple of minutes until deeply fragrant.
- 3Add tomato paste and stir it into the onion mixture, letting it cook for a minute to lose its raw edge.
- 4Add rinsed red lentils and enough water to cover them generously.
- 5Bring the pot to a simmer and cook for about 20 minutes, stirring occasionally, until the lentils break down into a thick, richly spiced stew.
- 6Add more water if the mixture turns too thick, adjusting to a hearty, pourable consistency.
- 7Season with salt and adjust the spice level to taste.
- 8Serve warm scooped up with pieces of injera flatbread.
