Ingredients and Steps

Big text, no distractions — for the stove

Ingredients

  • Ground buffalo or chicken
  • Onion
  • Garlic
  • Ginger
  • Cilantro
  • Cumin
  • Wheat flour dumpling wrappers

Steps

  1. 1Combine ground buffalo or chicken with finely chopped onion, garlic, ginger, cilantro, and cumin in a bowl, mixing well until the filling turns juicy and evenly seasoned.
  2. 2Roll small pieces of dough into thin rounds using a rolling pin, keeping the center slightly thicker than the edges.
  3. 3Place a spoonful of filling in the center of each wrapper.
  4. 4Gather the edges up and around the filling, pleating them together at the top and twisting to seal into a small purse shape.
  5. 5Arrange the shaped momos in a lightly oiled steamer basket, leaving space between each one so they do not stick together.
  6. 6Steam over boiling water for about 12 minutes, until the wrappers turn glossy and slightly translucent and the filling is cooked through.
  7. 7Carefully lift the momos out of the steamer.
  8. 8Serve hot with a tangy tomato-based achar dipping sauce.
