Ingredients and Steps

Big text, no distractions — for the stove

Ingredients

  • Cabbage
  • Flour
  • Eggs
  • Pork belly
  • Okonomiyaki sauce
  • Mayonnaise
  • Bonito flakes
  • Dried seaweed powder

Steps

  1. 1Whisk flour with grated nagaimo or water and eggs into a smooth, slightly thick batter.
  2. 2Fold in a generous amount of finely shredded cabbage along with chopped green onion until every strand is coated in batter.
  3. 3Heat a griddle or wide skillet over medium heat and oil it well, then pour the batter into a thick round mound.
  4. 4Lay thin strips of pork belly over the top and press gently, letting the pancake cook undisturbed for about 5 minutes until the underside turns golden.
  5. 5Flip the okonomiyaki carefully using two spatulas and cook the second side for another 5 to 6 minutes, pressing down occasionally so the center steams through.
  6. 6Flip once more briefly to firm up the pork side, then transfer to a plate.
  7. 7Brush the top generously with sweet okonomiyaki sauce and drizzle mayonnaise over it in thin lines.
  8. 8Finish with a shower of bonito flakes and a sprinkle of dried seaweed powder before serving hot.
