Okonomiyaki
Ingredients
- •Cabbage
- •Flour
- •Eggs
- •Pork belly
- •Okonomiyaki sauce
- •Mayonnaise
- •Bonito flakes
- •Dried seaweed powder
Steps
- 1Whisk flour with grated nagaimo or water and eggs into a smooth, slightly thick batter.
- 2Fold in a generous amount of finely shredded cabbage along with chopped green onion until every strand is coated in batter.
- 3Heat a griddle or wide skillet over medium heat and oil it well, then pour the batter into a thick round mound.
- 4Lay thin strips of pork belly over the top and press gently, letting the pancake cook undisturbed for about 5 minutes until the underside turns golden.
- 5Flip the okonomiyaki carefully using two spatulas and cook the second side for another 5 to 6 minutes, pressing down occasionally so the center steams through.
- 6Flip once more briefly to firm up the pork side, then transfer to a plate.
- 7Brush the top generously with sweet okonomiyaki sauce and drizzle mayonnaise over it in thin lines.
- 8Finish with a shower of bonito flakes and a sprinkle of dried seaweed powder before serving hot.
