Ingredients and Steps

Big text, no distractions — for the stove

Ingredients

  • Rice noodles
  • Shrimp
  • Eggs
  • Bean sprouts
  • Tamarind paste
  • Fish sauce
  • Palm sugar
  • Peanuts

Steps

  1. 1Soak flat rice noodles in warm water for about 20 minutes, stirring occasionally, until they turn pliable but still firm, then drain well.
  2. 2Stir together tamarind paste, fish sauce, palm sugar, and a splash of water in a small bowl to make the sauce, adjusting the balance of sour, salty, and sweet to taste.
  3. 3Heat oil in a wok over high heat and stir-fry the shrimp for about a minute until they turn pink, then push them to one side.
  4. 4Crack an egg into the cleared space and scramble it briefly before mixing it through the shrimp.
  5. 5Add the drained noodles and the prepared sauce, tossing constantly over high heat for about 2 minutes so the noodles absorb the liquid and turn glossy without clumping.
  6. 6Add bean sprouts and chopped peanuts and toss for another 30 seconds, just until the sprouts soften slightly while staying crunchy.
  7. 7Pile the noodles onto a plate and garnish with extra bean sprouts, a lime wedge, and chili flakes.
  8. 8Serve immediately while hot.
