Pad Thai
Ingredients
- •Rice noodles
- •Shrimp
- •Eggs
- •Bean sprouts
- •Tamarind paste
- •Fish sauce
- •Palm sugar
- •Peanuts
Steps
- 1Soak flat rice noodles in warm water for about 20 minutes, stirring occasionally, until they turn pliable but still firm, then drain well.
- 2Stir together tamarind paste, fish sauce, palm sugar, and a splash of water in a small bowl to make the sauce, adjusting the balance of sour, salty, and sweet to taste.
- 3Heat oil in a wok over high heat and stir-fry the shrimp for about a minute until they turn pink, then push them to one side.
- 4Crack an egg into the cleared space and scramble it briefly before mixing it through the shrimp.
- 5Add the drained noodles and the prepared sauce, tossing constantly over high heat for about 2 minutes so the noodles absorb the liquid and turn glossy without clumping.
- 6Add bean sprouts and chopped peanuts and toss for another 30 seconds, just until the sprouts soften slightly while staying crunchy.
- 7Pile the noodles onto a plate and garnish with extra bean sprouts, a lime wedge, and chili flakes.
- 8Serve immediately while hot.
