Ingredients and Steps

Big text, no distractions — for the stove

Ingredients

  • Mixed vegetables
  • Butter
  • Pav bhaji masala
  • Bread rolls

Steps

  1. 1Boil a mix of vegetables such as potatoes, cauliflower, carrots, peas, and capsicum together in salted water until completely soft, then drain, reserving a little of the cooking liquid.
  2. 2Mash the boiled vegetables coarsely with a potato masher, leaving some texture rather than making it perfectly smooth.
  3. 3Heat a generous amount of butter in a large flat pan and sauté finely chopped onions until soft and translucent.
  4. 4Add chopped tomatoes and cook until they break down into a thick, pulpy base, then stir in pav bhaji masala and red chili powder, cooking for another minute until fragrant.
  5. 5Add the mashed vegetables to the pan along with a splash of the reserved cooking water, and mash and stir everything together vigorously with the back of the spoon or a masher directly in the pan.
  6. 6Simmer the bhaji over medium heat for 15 to 20 minutes, mashing and stirring frequently, until it thickens into a smooth, well-blended mash, adjusting salt and butter to taste.
  7. 7Slice the bread rolls horizontally without separating them fully, then toast them on a hot griddle with butter on both cut sides until golden and slightly crisp.
  8. 8Serve the hot bhaji topped with a final pat of butter, chopped onion, and fresh coriander, with the buttered pav and a lime wedge on the side.
