Ingredients and Steps

Big text, no distractions — for the stove

Ingredients

  • Flattened rice
  • Mustard seeds
  • Peanuts

Steps

  1. 1Place flattened rice, or poha, in a colander and rinse briefly under running water, then drain well and set aside to soften for a few minutes, taking care not to soak it too long or it will turn mushy.
  2. 2Heat oil in a pan and add mustard seeds, letting them pop, followed by cumin seeds and a pinch of asafoetida.
  3. 3Add chopped green chili, curry leaves, and finely chopped onion, sautéing until the onion turns soft and slightly translucent.
  4. 4Stir in roasted peanuts and a pinch of turmeric, mixing well so the oil turns a light yellow color.
  5. 5Gently add the softened poha to the pan, along with salt and a pinch of sugar, tossing carefully with a light hand so the delicate flakes do not break.
  6. 6Cover and cook on low heat for three to four minutes, tossing once or twice, until the poha is heated through and evenly coated with the spices.
  7. 7Squeeze fresh lime juice over the top and sprinkle with fresh coriander, tossing once more to combine.
  8. 8Serve warm, optionally topped with sev for crunch.
