Poha
Ingredients
- •Flattened rice
- •Mustard seeds
- •Peanuts
Steps
- 1Place flattened rice, or poha, in a colander and rinse briefly under running water, then drain well and set aside to soften for a few minutes, taking care not to soak it too long or it will turn mushy.
- 2Heat oil in a pan and add mustard seeds, letting them pop, followed by cumin seeds and a pinch of asafoetida.
- 3Add chopped green chili, curry leaves, and finely chopped onion, sautéing until the onion turns soft and slightly translucent.
- 4Stir in roasted peanuts and a pinch of turmeric, mixing well so the oil turns a light yellow color.
- 5Gently add the softened poha to the pan, along with salt and a pinch of sugar, tossing carefully with a light hand so the delicate flakes do not break.
- 6Cover and cook on low heat for three to four minutes, tossing once or twice, until the poha is heated through and evenly coated with the spices.
- 7Squeeze fresh lime juice over the top and sprinkle with fresh coriander, tossing once more to combine.
- 8Serve warm, optionally topped with sev for crunch.
