Ramen
Ingredients
- •Wheat noodles
- •Pork bones
- •Soy sauce
- •Miso
- •Green onions
- •Soft-boiled egg
- •Nori
- •Bamboo shoots
Steps
- 1Rinse pork bones under cold water and blanch them in boiling water for 5 minutes to remove impurities, then drain and rinse again.
- 2Return the bones to a large pot, cover with fresh water, and simmer vigorously for at least 8 hours, topping up water as needed, until the broth turns rich, cloudy, and milky white.
- 3Strain the broth and season a portion of it with a tare of soy sauce or miso, adjusting to taste.
- 4Cook fresh wheat ramen noodles in a separate pot of boiling water for a minute or two until just tender, then drain quickly.
- 5Place the seasoned tare in the bottom of a bowl, ladle in the hot broth, and swirl to combine.
- 6Add the drained noodles, arranging them so they sit just below the surface of the broth.
- 7Top with sliced braised pork, a soft-boiled egg halved lengthwise, a sheet of nori, sliced bamboo shoots, and chopped green onions.
- 8Serve immediately while the broth is steaming hot.
